Since the beginning of time, man has been finessing his cooking skills by using the heat of a direct flame. These days the modern form of the barbecue is to add some sauce, baste the meat and slow cook it for around 5-6 hours at a low temperature of approx. 200 degrees using wood or charcoal beads.

These days when you head out to a barbie with friends, you automatically think of a big juicy steak or a mustard covered hot dog. Irrespective of what attracts you to a barbecue, it remains a popular American tradition. Barbecues remain a strong part of the American social fabric and will continue to do so for many years to come.

And while there is no doubt that American’s love a barbecue there is some doubt as to where the barbecue actually originated. Many states including Texas, Virginia, the Carolinas and even Georgia all have their own definitions and even claims to some part of barbecue history.

A Texas barbecue sauce is typically a thick, sweet tomato sauce. Texas also has a reputation to favor beef for barbecue using a dry-rub mixture of seasonings. They also usually prefer to have the meat hanging over the coals to slow cook.

Southerners on the other hand prefer a thinner, more vinegary sauce that is used to baste a port type meat. They tend to use a pit to cook and that meat tends to take on a smokey flavour.

Families in general have their own unique barbie taste and this is part of the fun. It is even a great conversation starter as you stand around the BBQ cooking meats – I wonder how many people know where barbecuing actually began?

Chocolate peanut butter cookies are simply irresistible for lots of people. But getting the right recipe is crucial: if this kind of cookie is not perfectly made, the disappointment will be great! I have always found chocolate and peanut butter to be the best combination possible. Whether you are making peanut butter chocolate cookies, or eating chocolate peanut butter cups, there is just nothing like it. I literally cannot allow myself to have chocolate candies in my house. I can’t control myself around them.

I feel like the tastes balance each other out somehow. It only works if the peanut butter has some salt added to it. I have always loved to cook chocolate recipes, and chocolate peanut butter cookies are my favorite. To me, however, they do not work if they use the processed peanut butter. You have to get the all-natural kind that separates and needs to be stirred. Otherwise, the chocolate and peanut butter cookies will not turn out right. They will taste slimy and artificial. They will not stand up to the tastes of a true chocolate peanut butter connoisseur like myself.

Of course, the one time that processed peanut butter works is in chocolate peanut butter cups. I am fairly certain that this is the artificial kind of peanut butter with the partially hydrogenated oils. I checked the package once, and I believe that is what it said. Still, nothing is better than chocolate peanut butter candies. I just can’t get enough of them.

I have always loved to cook chocolate peanut butter cookies for other people. Normally, I cannot cook them. I will eat them all, you see, so I have to have a special reason to get to make them. This is why I love when my daughter has her birthday. That way, I get to make a chocolate peanut butter cookies for all of her friends. Sometimes I will make chocolate peanut butter brownies too, but she thinks that is going too far.

Of course, last year I did not get to make anything. You see, there is a kid in her class with a peanut allergy. Just being around chocolate peanut butter cookies will kill him, or so they say. Needless to say, my daughter was very disappointed. None of the kids in her class got to eat any chocolate peanut butter cookies. Of course, I brought her some chocolate cake to school. It was pretty good, but I don’t think it was the same. Still, the birthday party was a hit. All the kids love to get to eat sweets in class.

Did you ever think about owning your own Gaggia espresso machine? I happen to own one of those cuties, and I can assure you that it makes waking up a lot more attractive. It looks a bit like Zen meditation: take your time to make that one (or two) perfect cup of delicious coffee. Followed by taking your time to taste and drink it up! Before sipping that next cup of coffee, you may want to ponder exactly what it is you’re drinking.

Oh but, coffee is just coffee, right? Not even close. There are all sorts of coffee beans, coming from all regions of the world. If you actually take the time to sample a few, you’ll definitely notice the difference. Since I had the privilege of living in four different states, and visiting plenty of others, I’ve learned a bit about java. There’s a method to the madness. And now I’ve come to the conclusion that acquiring my very own Gaggia espresso machine was a wise choice. When you make your own coffee, you make it right!

I’ll bet money that you’ve been to a few coffee houses that you simply didn’t care for. I imagine this is due to the fact that everyone and their dog are opening up a coffee dive. Hey, there’s no doubt it’s a booming industry, but come on people. Spare us the bitter aftertaste. Just because you picked up a fancy espresso machine and own a small business-like venue, doesn’t mean you know java. Real coffee is made with care.

Once I figured out the process, I bought a Gaggia espresso machine and mastered the technique at home. The purpose? Waking up to a great cup of joe every single morning. It all begins with your beans. This is the base of every great cup of coffee. Beans are roasted and bagged, and often vacuum-packed. What does all this mean? Well, it means they have a life-span once cooked to perfection.

If the beans are vacuum-packed, they can stay decent for up to three whole months. If they’re frozen, sometimes longer. However, if the freshly roasted coffee beans are bagged and sold, you’d better be ready to use them over the next two weeks. This is the time span you’ll have to enjoy great tasting java. Just be sure to grind each portion just before using. The flavor will leave your taste buds in perfect serenity.

Searching for a Gaggia espresso machine or any espresso machine for that matter is a cinch. Take a gander at the variety online or in your local William Sonoma store. You can acquire a decent espresso machine of your own for 300 bucks. It all depends on your taste, preferences and budget. One thing I do know for certain is that my Gaggia espresso machine has saved me oodles of cash and trips to the local coffee shops.

Many people feel really embarrassed when they get the wine list from the waiter. It doesn’t look very sophisticated if you really don’t know anything about wines and you have to choose wines that fit with your different dishes. If you want to confuse and embarrass me, put a wine list in front of me and tell me to choose something to go with my meal.

I don’t know why, but I am completely clueless. I have tried to learn some thing about wine, and I have many friends who have tried to teach me what they know. For some reason, I just don’t get it, or perhaps I don’t care. I guess wine is okay, but I haven’t really developed a taste for it like so many other people I know. They can pick up a wine list and know exactly what they want.

I can’t even tell you the difference between the different types of wine on a wine list. There are different types and they are grown in different areas of the world. I don’t understand any of it. I even live near a very popular wine area, and I still can’t seem to grasp any of it. I have considered going to a wine tasting, but I have never gotten that far. I’m not sure why I am so worried about it, because I always know I can just pass the wine list off on one of my friends to make the choice for me.

If you are stumped by a wine list like I am, you can learn. There are many great places to learn about wine, and perhaps you might want to try a wine tasting first. They give you different types of wines that you might find in many restaurants, and they explain what you are tasting and why it is called what it is.

There are different types, and what they are called depends on how they are made and sometimes, by what type of grape is used. That is about as far as my knowledge goes, but I’ve decided I really don’t care to learn. If you do, you can find great ways to know what you are talking about when asked to choose from a wine list.

If you know nothing about a wine list, and are presented with one, you can simply ask the waiter what they would recommend. In some high end restaurants, the wait staff will indeed know what they are talking about, and they can recommend something that will go with what you are going to have for dinner. It’s not an important skill in life, but if you do business over dinners quite often, you might feel like this is something you should know. After some time, you may decide you are just like me, and you really don’t care all that much.

Belgian chocolate is considered the best chocolate in the world, but in the United States the Hershey Chocolate bar is at the top. Of course you can not argue about taste and smell, and almost everyone has a different opinion about it. It may not be the most expensive chocolate in the world, but Hershey chocolate certainly hits the spot when I have a craving.

I guess who makes the best chocolate in the world can be something that can be debated do death, and there may never be a winner. Everyone wants something different when they want something sweet, and everyone has a different idea of what the best may be. You may find that if you have a chocolate craving, you may grab a Hershey bar. It remains the perfect snack, and perhaps one of the favorite chocolate bars of all times.

Hershey chocolate has become the standard in the United States, though there are many other types of chocolate that are found on the shelves right along with it. Perhaps the secret to Hershey’s success is the simple yet tasty recipe they use, as well as the wide varieties of different candy bars and treats they make. No matter what type of candy or bar you are looking for, chances are good that you will find it was made with Hershey chocolate.

There are many candy bars that are made with Hershey chocolate even though you may not realize it. It seems that each bar is branded as it’s own entity rather than just another Hershey product. This might be why each type is so successful. If you visit the Hershey website, you can learn about each of their products as well as the history of Milton Hershey, and how they company began and grew into the chocolate giant that it is today. You can also learn about the beginnings of Hershey Park, and how it was an incentive for employees in the beginning.

Hershey chocolate is also popular as a gift, or as a party favor. You can get Hershey bars that are personalized. These personalisations are usually on the wrapper. The sizes range from the mini Hershey chocolate bars to the very large ones. Did you know Hershey has a bar that is roughly one foot by two feet, and about an inch deep?

If you are looking for a special gift that will knock someone off of his or her feet, this might be just what you are looking for. If they are a fan of Hershey chocolate, they may thank you for a long time to come. However, if they are dieting, they may groan, but will love the gift anyway.

Some people don’t need a recipe to cook, some people just choose to “wing it”, throwing ingredients together. Others lack confidence to make their own meals and prefer to follow a recipe book, unlike those that find it more spontaneous to just throw the fridge door open and see what they can throw together. Every day someone creates a new recipe, just by using the ingredients on hand. Sometimes if a recipe calls for an ingredient that’s not readily available, creative cooks will find an intriguing substitute.

The people that rely on recipes may just lack confidence in their cooking abilities, but that doesn’t mean that can’t be just as good of cooks as the inventive, creative chefs. Cooking is an art form, regardless of whether it is from a recipe or from the imagination of the person preparing the meal. Sometimes, it’s helpful to follow a recipe, especially in the instance of a special meal that has a characteristic flavor. For example, if you wanted to prepare an Argentinean meal, you need to follow a recipe. Otherwise, you are going to cook something — but chances are it won’t be an original Argentinean meal, with the unique Argentinean flavor.

One great example of a typical Argentinean dish is “DULCE DE LECHE”. Dulce de leche is a sweet, creamy filling that is usually used in Argentina in the middle of cakes, cookies, on top of bread or even alone. The necessary ingredients are:

4 liters of milk (1.06 gallons);
1 kilogram of sugar (2.20 lbs);
half teaspoon of sodium bicarbonate;
a bit of vanilla essence.

To prepare the dulce de leche, add all the ingredients together in a large pot and cook over high heat. It’s essential that you keep stirring the ingredients together with a wooden spoon, so that the mixture does not burn. When the mixture begins to turn to a light brown color, turn the heat down to a low and keep simmering. The moment the mixture becomes thick, the Dulce de leche is ready to eat or to use it for the fillings as named before.

So, if you are one of those who like to cook following a recipe, here you have a new one to try. I promise you it is a delicious traditional Argentinean food. After trying it for the first time, you will not be able to stop eating it, it is like addictive. Anyhow, you should also try to leave the book aside and try to cook out of your imagination. I promise you it is a lot of fun!!

The best thing to remeber about cooking is that it is not always what you cook, but who you cook with.

Did you ever try Dunkin donuts coffee? I hope not, it was probably not one of those moments that you experienced true happiness. Making good coffee is not easy, and making damn good coffee is extraordinary difficult and requires some talent and taste… The American diet. When you hear those three little words, what comes to mind? For me it’s fast food for lunch, because everyone is in a big rush and convenience is all that matters.

For dinner it’s take-out from the Chinese place down the street or maybe a pizza from Domino’s. Oh, and then there’s breakfast. This consists of a jelly-filled Bizmark and an extra large cup of Dunkin Donuts coffee. Does that all sound about right to you? Wow; that’s a lot of fat! Certainly more than anyone’s daily recommended allowance. We Americans really have to do something about all the foul things we consume. It’s killing us!

So there I was, picking up my daughter from an orthodontist appointment. She had just had her braces tightened, and for some reason she still wanted junk food. She pointed out the Dunkin Donuts right next to the orthodontist. Now why would they put that place right next to a business that specializes in making teeth look great? Go figure. Naturally we had to go in and get a box of donut holes. So we did and I discovered Dunkin Donuts coffee in the process. I had never tried their specialty coffee drinks before, but they looked pretty darn sweet.

I believe it was some sort of mocha shake frapuccino thing I ordered. Then we were out the door. As I wrapped my lips around the straw, I didn’t give it much thought. But when the Dunkin Donuts coffee hit my mouth, I cringed. This stuff was like sludge. It was way too sugary and rich. I can’t believe some of the stuff they call coffee now days. I only tried it because my mother had told me that she likes Dunkin Donuts coffee, but I’m sure she was referring to plain old drip-pot brew. Not this new-age concoction.

It can be a challenge finding a great cup of java these days. In all honesty, I can’t recommend Dunkin Donuts coffee based on my single experience. Most caffeinated beverages I’ve tasted in my day are better than that one. So if you’re looking for a quick java fix, but don’t know where to go; let me make it simple for you. Just head through a Starbuck’s drive-thru. Let’s leave the coffee making to the coffee people.

If you ever eaten food in a Mexican restaurant or home, there were possibly some authentic Mexican cooking utensils. Maybe you notices pottery that was used to make the dishes. Mexicans use a variety of different cooking methods. This includes slow roasting, deep-frying, baking, and they have unique pots and pans for these methods. Mexicans like to use a lot of fresh produce in their cooking, They can use herbs and spices and you will find sharp knives and a mortar and pestle in every Mexican kitchen.

The Traditional Mexican Cooking Pots called Ollas, also known as Barros, are deep clay cooking pots. They are perfect for simmering beans, stew or soup, and clay is a great form of cookware because it distributes heat evenly and avoids burn spots. Barro means clay or mud and olla means pot. These cooking pots are durable enough to put over a direct flame all day long. You do need to warm clay before using it because it can crack. So exposing it to a high heat is not recommended. If you are going to be baking, let the pot warm up the same way as the oven. Your Mexican dishes will tend to have a subtle earthly taste when you cook in a clay pot.
Some more Mexican cooking utensils that are used in Mexican cooking is Comals. These are big, round griddles can be made out of cast iron, aluminum, or clay. The modern ones normally have a non-stick finish and they are used to roast some chilies and warm up tortillas. Cazuelas are for simmering sauces such as mole. The cazuela is a big, round clay dish, It is usually about six inches deep. The inside has a glaze and the outside can be painted in bright colors or left plain. Cazuelas usually have handles so you can safely place them over a fire.

The tortillero is a Mexican tortilla press with two round plates or wooden discs. You put your ball of masa between the plates and press it down to form a tortilla. These machines used to be wooden but are normally made of cast iron these days. You can get some cheap aluminum ones too but they can break easily. Even more handy Mexican cooking utensils are the metate y mano which is found in most Mexican kitchens. This is a platter sized concave dish made from stone and is supported on three short or long legs on the table. There’s a large, round stone, which you roll on the surface to grind or mix your ingredients.

The Mexican type of mortar and pestle is called molcajete y tejolote and this is a small clay, wood or stone bowl with a long cylinder made of the same material. The cylinder is rounded on each end and you use it to pulverize the ingredients in the bowl. A powered, grainy, or mushy texture is obtained by rolling the cylinder in a circular motion. Hot chocolate is a popular Mexican drink and a wooden whisk called a molinillo is used to make froth on the top. You spin the molinillo between your hands to do this. Some are plain and others are highly decorated. The molinillo is a small but significant part of the exciting world of Mexican food customs. It is possible to make some delicious Mexican recipes without the proper equipment, but it is more fun to use them. Mexican pots and tools look great when displayed in your kitchen waiting for you to cook your meals.

Cotija and Romano cheese are very similar in both flavor and texture, but Cotija still has a certain quality which stands out on its own. Cotija is named for the town in Michoacan state where the cheese originates from.

Now lets look at Queso criollo which is a mild, nutty yellow cheese. This cheese hails from the Mexican state of Guererro. It is excellent on tortas, or Mexican sandwiches.
